WHAT IS IT?
Passatelli is a pasta that is cooked in brodo as a soup. in the past it was used to celebrate special occasions such as baptisms, Easter, pregnancies and birthdays. The reason for this was because it uses a lot of Parmigiano Reggiano Cheese and bread both of which were expensive, luxuries saved for special occasions. Rich folks used cheeses and farmer's houses used stale bread. The brodo is a chicken stock flavored with vegetables.
